Esta fosforilasa de las plantas es la contrapartida de la GUCÓGENO FOSFORILASA de los animales que catalizan la reacción del fosfato inorgánico sobre el enlace alfa-1,4-glucosídido en el extremp no reductor de los glucanos, lo que resulta en liberación de glucosa-1-fosfato.
